make - No linked recipe today just my tried and true easy and quick baked salmon instructions! I usually make steamed string beans and roasted new potatoes on the side of this dish. Start with 1 1/2 lbs of wild salmon or arctic char (in season now). Place in a baking dish lined with parchment paper (makes for easier cleanup). Squeeze half of one lemon over the salmon. In a small dish combine 1/2 cup of veganaise (I like follow your heart soy free), 1/4 cup of dijon mustard, the juice of the other half of the lemon, lemon zest, salt and pepper. Spread over the fish and bake at 400 until desired doneness. Usually around 10-15 minutes. For an added crunch top with panko before cooking!
decor - How sweet are these paper eggs for Easter? I’m thinking of getting them to hand in the dining room…love the colors (neutrals of course)! Luke is at that age where he really looks forward to decorating the house for holidays and I’m trying to lean into that :)
kids - I bought the boys a few great little games for Valentine’s Day this year. Luke is really into word searches and Harry loves games like go fish and old maid. They loved these! The little ones are great to throw in your bag for restaurants or car travel!
